Our dishes are the creation of Chef George Meza and Sous Chef Alex Razon. Their Menu is seasonal, with a focus on light, enriching local ingredients. Our restaurant can be enjoyed with or without a reservation to the communal bath. You can view a sample menu here.

Our Chef George Meza, is a California native with an international upbringing, his foray into the restaurant world began in Napa Valley where he quickly learned and thrived off of using lush California ingredients as the centerpieces for his dishes. Under the mentorship of chef Hiro Sone of Napa’s Terra, George worked his way up through the ranks of the kitchen from chef garde
manger to chef de cuisine. Prior to moving to the Bay Area in 2012, George attended Napa
Valley cooking school and traveled to stage in Michelin-starred kitchens Eleven Madison Park,
Le Bernardin and the Bay Area’s celebrated Manresa and Saison. In 2016 he partnered with
Sunny Simmons and Caroline Smith to oversee the kitchen at their forthcoming urban
bathhouse and restaurant concept, Onsen. At Onsen, George draws on his nuanced
background in Asian flavors to present vegetable-focused small plates complete with layered
flavors and an emphasis on local produce.
Our Sous chef Alex Razon, previously of Nojo (Greg Dunmore), Oro and Commonwealth (Jason Fox) has been inspired by Bay Area restaurant industry for the past decade. Alex focuses on creating dishes with seasonality and farm fresh ingredients, while applying Japanese flavors and techniques through a progressive California lens.
